Winemaker Notes:
B. Blanc stands for Barrel Blanc, partly because sauvignon blanc still sounds like a dirty word. Now don’t get all ‘judgey’ because this one is a little more grown-up and edible. As always we start in the vineyard, and this time by taming these wild tree-like vines into whispers of tropical summer spins… but then we squeeze a lemon in your eye and make you guzzle some jalapeño juice.
Organic house block sauvignon blanc. Fermented on skins for 16 days. Pressed to barrel for for 16 months. Native yeast ferment, unfined, minimal filtering and sulphur.
