This brings together inspirations and techniques from a range of styles, made in the traditional method but using fruit picked a little riper and pressed a little harder to pull through more flavour. Pomegranate, strawberry leaf and rhubarb. Red apple, slightly creamy texture, dry finish, intriguing five
spice notes.

Vineyard and Winery:
The vineyard is at 848m asl on the Whitlands Plateau, planted in 1999, tended by Clare Burder. The site was set up for sparkling wine production by the great Dr Tony Jordan (global consultant to Moët-Hennessy).
