The fruit for this blend is from an old Semillon vineyard which contains various other white varieties such as Riesling and Trebbiano. A real mixed bag. The organic fruit was hand-picked and then left on skins for a day before being basket-pressed and fermented in a concrete tulip fermenter. The wine was then matured for one year in a large oak cask. You get spiced pear and citrus notes on the nose followed by green apple and papaya on the palate.
