TASTING NOTES: Red ruby colour. In the nose is persistent with red berries and dry cherries flavors. The taste is rich and complex because of the sweet tannins.
BEST WITH: It is ideally paired with game and fatty meats. Particularly indicated with ripe cheeses.
HISTORICAL NOTES: It has been mentioned since ancient times as a wine of great renown. The origin of the name is owed to the Romans, Racimulus fucus, an expression translated into vernacular as ràp fosc, which means dark grape cluster, precisely due to its intense colour. The first documents to speak about it date back to 1347, where it is described together with Ribolla Gialla, as being among the most prestigious and expensive grape varieties. The name of the grapevine includes the peculiarity of the grape cluster, characterised by the reddish colour of its bunch-stem.
AGE OF THE VINES: Between 20 and 45 years of age.
SOIL: Hilly, clayey, made up of layers of marl and sandstone of Eocene origin.
VINEYARDS SET UP: Vines are trained using the Guyot and double arched cane system, 4000/5000 of vines per hectare.
HARVEST SYSTEM: Manual.
WINEMAKING: Maceration of the destemmed grapes at a temperature of 24-26°C. De-vatting with soft pressing of the pomace. This is followed by racking and an evolution period until bottling.
