Flavours of cherry, raspberry and wild violets lifted with an undercurrent of coffee and drying tobacco leaves.The palate flows with flavours of cherry and forest berries directed by tight acidity to a long finish.
Whole bunches of hand-picked Eden Valley Pinot Noir sourced and handpicked from the Marneden Springs vineyard at 400m elevation on brown sandy loam with partial quartz matter. Half of the production was carbonic macerated in 200kg parcels for two weeks, the other half was made with approximately 50% whole bunch ferment and from 4 to 14 days on skins, small batch ferments and each ferment is assessed on its own merits as to when it's to pressed to barrel for a 9 month maturation period.
Bottled without filtration, no finings and small doses of sulphur before closure.
