100% destemmed (by hand) Cabernet Sauvignon sourced from clay based soils in the McLaren Vale at 95m elevation goes through a wholeberry ferment. Basket pressed 10 days later, and approx a month later completing primary fermentation in stainless steel. Racked off lees after full malolactic fermentation.
Bottled without filtration, no finings and zero added sulphur.
