Chianti Classico, Tuscany
I've included the technical information below because it's quite impressive but really this wine is made quite simply. High quality grapes, made with minimal intervention in large format oak so as not to impart to much oak character and show the true nature of Chianti Classico. Yum
Red ripe strawberry with some notes of leather, soft oak and white pepper. Long finish with an evolving aftertaste. Well-balanced and perfect phenolic maturity. Persistent.
Altitude: 300-420 masl, Position: south, south-west, Soil type: alberese, marlstone, limestone. Training system: Cordone speronato (cordon spur). Vine density: 5.500 vines/ha. Yield/ha: 60 q. Yield/plant: 1.0 kg Handpicked grapes in small baskets between the end of September and the beginning of October. Spontaneous fermentation at 27-28°C for 15 days in Slavonia oak cask 80 Hl. Spontaneous beginning of malo-lactic fermentation. 80% in Slavonia oak barrels 80 Hl and 20% in French oak barrels (second & third passage) for 2 and an half Year. 8 months in bottle.
