Dominic Valentine, Matt Stone and Jo Barrett present Amble Wine - a naturally fermented, skin contact Sauvignon Blanc from Willowlake, Gladysdale. Tastes of tropical fruit and elderflower with grippy phenolics and a juicy mouth feel. It exhibits the perfect balance of complexity and purity displayed in Sauvignon Blanc. Fresh - but the lees feels are epic.
One half was whole bunch pressed and de-juiced to old white french oak for wild barrel fermentation. The other half was destemmed and fermented on skins (like red grapes) for two weeks and then left on skins to soak for three months! Yum! Pressed off skins in July and matured in old French oak barrels. The two parcels were blended together in October and racked twice before bottling with no fining or filtration and minimal sulphur addition.
