Amble SAUVIGNON BLANC
Dominic Valentine, Matt Stone and Jo Barrett present Amble Wine - a naturally fermented, skin contact Sauvignon Blanc from Willowlake, Gladysdale.
Tropical fruit and elderflower notes. Grippy phenolics and juicy mouth feel. Exhibits the perfect balance of complexity and purity displayed in Sauvignon Blanc. Fresh but the lees feels are epic.
Vineyard: Sauvignon Blanc grapes sourced from Willowlake Vineyard in Gladysdale in the Upper Yarra region of Victoria. Elevated at 250m asl, all handpicked.
Winemaking: One half was whole bunch pressed and de-juiced to old white french oakfor wild barrel fermentation. The other half was destemmed and fermented on skins (like red grapes) for 2 weeksand then left on skins to soak for 3 months!!! Pressed off skins in July and matured in old french oak barrels. Thetwo parcels were blended together in October and racked twice before bottling with no fining or filtration and minimal sulphur addition.
