CLO, 2016 Courabyra Chardonnay

Elevated at 730m on red granite soils from the Courabyra vineyard in Tumbarumba, NSW.
Chardonnay is handpicked from 26 year old vines and wholebunch pressed to a neutral 1000L Stockinger foudre and an old French barrique. The wine is barrel fermented wild through primary and allowing full natural malolactic fermentation without the addition of bacteria, enzymes or adjustments.
The resulting wine is left on lees for 2.5 years with no bâtonnage or remontage but with light oxidative handling to build complexity. It is transferred out of oak after 12 months ahead of settling in tank for 18 months.
Unfined, unfiltered and bottled under crown seal with a total of 40ppm SO2. 2.8T/Acre1800 bottles produced
